How do Americans have a conversation about hobbies???

Most English textbooks have lessons about “hobbies”, but I have to say that as an American, I never use this word. It sounds like baby English.
You can ask:
What do you do for fun?
What do you like to do?
What do you do in your free time?
You can say:
I love playing music.
I love to play music.
I love music.
Music is my passion.
Playing music is my passion.
When someone asks me about my hobbies, I tell them, “I play music with my friends and I love riding my bike around LA. You?”
